The Byzantine/Eastern Roman Empire and the Sassanind Empire (Both governments and the empires population) were having a huge war during that time so wouldn't events in what they saw as a backwater filled with barbarians be considered as unimportant?

Yeah according to the fables he unified Arabia conquering Oman and Yemen after conquering modern day Saudi Arabia. Still though I don't see anyway he was real.

I dunno, seems even back then international trade was expansive enough that "Some guy with an original religion (do not steal) is conquering
the shit out of anything he sees!" would make the rounds.

It simply used to be a form of Christianity. Not everybody fancied the Catholic stuff about the trinity. They split off and because the Arabs always wanted to have their own religion of sorts they made up some dude. That's it. Jesus is Mohammad. It's just a title, nothing else. Eventually they pretended that it was a different person and made up some conquest story.
There is nothing in the history about a conquest because there never was a conquest. They just split off from the Catholic church.
Over the years tey refined their story, deleted multiple times everything that said something else and declared it heresy. After a couple of hundreds of years of doing that we're at the current situation.

In the archeological record, these legends have no substantiation.

What evidence is there for most of the figures talked about in all of those Abrahamic religions? Last time I checked the evidence for the kingdom of David and of a unified kingdom as a whole before the Persians is laughable.

That's really the main flaw with these works: It can get tricky figuring out what is myth, fiction, or actual historical stuff.
