The best part of Episode 3 was Anakin progressing from defending Palpatine from execution (plausible) to him pledging fealty to the Sith (unlikely, but he was light on options at that point I guess) to him personally slaughtering a bunch of elementary school children that knew him. It wasn't like Palpatine had him overload the temple's power reactor or something, it was full on Adam Lanza mass child murder.
Makes that force ghost scene in ROTJ all the sweeter.
Palpatine: "Man, you sure are fucked up, Anakin. I think you were just looking for an excuse to go murdering people."
Ya know, being part of something terrible, sharing responsibility, killing the Jedi leading to the younglings being unprotected. That would've been enough and could've been something eating away at him.
Instead of him collecting more single digit boy bodies than the Pope personally.
The troopers should've gunned down the Younglings while Anakin was busy fighting an actual Jedi. Then they report to him that they left no survivors so they can give him a moment of actual internal turmoil as it actually dawns on him what he has become.
George basically wasted the first two prequels on stupid bullshit. The dumbfuck had to skip over the Clone Wars because he had no more screentime to tell that story. Then he had to plow through Anakin's fall to the Dark Side all in one movie, when that should have been happening throughout the trilogy.
The Phantom Menace is almost completely superfluous to the plot. It just sets up the stage for Obi-Wan, Anakin and Padme. That's it.

The romance in Attack of The Clones is extremely compelling. It doesn't have to be hollywood style romantic dialog, and like above poster said it wouldn't be realistic for Anakin deliver to smooth dialog expected of a ladies man like Han Solo. Of course he would be pathetic but he's speaking from the heart and thats why it's so effective.
Anakins forbidden romance with Padme is the heart and soul of the film. Also when he loses his mother and vows to become powerful enough to even stop people from dying. Which is why he is so blindly desperate to stop his prophetic dreams of Padme dying in episode 3. Very anime.
The score alone is iconic and John Williams at his best if not absolute top form. Especially when compared to even his laziness in the sequel trilogy. Say what you will about the prequel trilogy but they were masterfully scored, perhaps even surpassing the OT.
In the prequels Vader is the Postal Dude and in the Disney franchises he's Jason Voorhees.
If New Hope was made today Vader would tear Tarkin's dick off, feed it to him and then shuttle to Alderan and force kill everyone.
Episode 1 should've been skipped entirely. You can deal with Anakin having been a slave and all that shit via exposition or at least condense all that shit into a third of the movie and doing a time skip.

They should've just focused on the separatists being, well separatists. Borrow from Gundam's One Year War if you have to.
Show the Republic's forces getting their asses handed to them due to different chains of command, training and materiel, with Palpatine getting voted to be a Roman-style dictator (taking over total command in a time of crisis because the senate is too slow and inefficient) and enacting his own kind of Marian reforms.
