Pike specifically picks him because he's aware he has combat experience, though doesn't mention what that is. Sulu may have just assumed Pike was into his swordfighting skills.

Mind you, the movie also had a scene earlier establishing that Pike didn't recognise Sulu, so now I'm curious how he found out about Sulu having any skillset at all.

In TOS, the script where Sulu is shown fencing originally called for him to be wielding a samurai sword. George Takei requested it be changed to fencing to avoid being too sterotypical.
