Revenge Of The Sith was technically a good one. Not as presented, but the story itself was good. I read the novelisation that completely redid the dialogue, expanded on Dooku's role and focused Anakin's motivations more on his suspicions of the Jedi as Lucas had originally devised rather than muh Padme, and it worked very well.

RotS is a perfect example of a pointless prequel. Going into that movie everyone already knew what was going to happen.
Anakin would become Darth Vader.
All of the Jedi except Obi Wan and Yoda would be killed.
Those two would go into seclusion.
Padme would give birth to Luke and Leia.
The Republic would become the Empire.
These things weren't even considered spoilers. They were just the motions everyone knew the film had to go through. Watching the movie got you, what? Obi Wan riding a shitty CGI basilisk and fighing lightsaber propeller cyborg thing? The duel between him and Anakin that was far less interesting than everyone pictured it decades prior? Wookies?

It also ended on one of the worst types of prequel endings (aka the most common one): One that had everyone effectively end where they started in the original movie, meaning they spent the intervening 20ish years doing more or less nothing. The Death Star is already being built on, Vader is already in the armor he'll die in, and both Jedi just gave up, instead of at least trying to support rebellious activities for a few years.
The Annie vs Bennie fight was also trying way too hard to be epic, intense and symbolic. They're basically fighting in Hell, with ludicrous acrobatics and scenery changes. The only good thing about this nonsense is that this might have inspired Bayonetta.

The Mustafar fight is fucking awesome. It's completely ridiculous, but it's fucking awesome. What else do we have Star Wars for?
Movie novelizations are mostly cash-in tripe, but I guess there's an exception to every rule. The guy wrote the ROTS one(Matthew Stover iirc) didn't just transcribe the script, he wrote a legit novel novel. Like whole passages about the differences in the characters' fighting styles, a chapter about Dooku's plans for the future, basically expanding on all the stuff you'd actually be interested in when watching the movie.
