That's a tough one, the PS3 had more variety than the 360 did in terms of genres (360 was VERY shooter heavy early on), and the 360 went to complete shit by the end with that kinnect garbage. I think most systems have a particular glut of some genres, the PS3 was full of JRPGs, the SNES/Mega Drive with Platform games and the 2600 Space Invader clones.
The only Turkey it had was Mortal Kombat Gold, and that was only because it was a rush job.
Pound fo pound, the Dreamcast probably had the best run for fighting games on what would be considered classics. Soul Calibur 2, Street Fighter III, Power Stone, Dead or Alive 2 Etc. Nah man, PS3 > Dreamcast because a lot of those DC games were reprinted for the PS3 and the PS3 has a better default controller than the xbox 360 or DC when it comes to fightan games. PS2 was a similar case. PS2 is probably one of, or maybe THE best console for fighting games, because it has a lot of compilations, plus all the great fighting games from its own generation, like SC II, Tekken 5, Virtua Fighter 4 Evo, Guilty Gear XX Accent Core Plus and so on. So you take all that and you tack onto it the 2 Street Fighter collections, Samsho collection, KoF Collection, KoF XI, KoF '98 Ultimate Match, 2 Fatal Fury collections and loads of other arcade collections.
As for Xbox 360 vs PS3, it depends what you want to play. Generally the Xbox 360 has a better library when it comes to shooters (including shmups, thanks to Cave), but lacks on specific genres like fighting games and japanese RPGs. I'm a pad player with fighting games, but use of a fight stick is practically mandatory on Xbox 360 fighting games with conventional motions.
As for Xbox 360 vs PS3, it depends what you want to play. Hopefully we'll see a multi cart soon, they finally hacked it last year and I have a Saturn collecting dust because I can't/won't buy those games.
