Again, that depends what you want to make. If you want to make steak it's probably best to use the back of the cow. If you want to grind the meat into mince or you want to slow cook cuts beef for casserole (i.e. what Jews do) it's best to use the front of the cow

Anyway, all of Leviticus was a mistake. It's basically what created Judaism. A funny change from a mother goddess and her son to deleting the mother and father entirely and present the son, Yahwe, as the one and only God.
Ironically, this eradication of the matriarical system in deities led to the most matriarical group and in turn to neurotic, faggot males with a chip on their shoulder since early childhood.
