That extra content was shit though, is the difference. Making the game way easier isn't nearly as fun as adding in extra playable characters or ships.

That MMZ collection ruined the difficulty of those games with the super easy mode and checkpoints every 4 steps. Not to mention, the infinite lives thing the collection does fucked over the score system completely, since lives no longer count against your score (even if you die 5000 times, the collection gives you a perfect score on your lives counter when the score is tallied.)
