Yeah, dunno about contract law in the states but here it's still legally binding even if a pseudonym was used. You may use any name you like, unless you intentionally try to mislead people about your identity. So Paul Jones could sign a contract as "The Cuntsmasher" and it'd still be binding and proper as long as he'd provide the information to his legal name when asked.
Signing under a different name to mislead would be straight up fraud, though.

In short: That contract would be fine over here. He could've signed it with "Tonkasaw" if he wanted no problem.

Also, as far as I know, you can sign under a pseudonym and it'll be fine since a lot of SAG actors sign under their stage names and not their legal names.
