In the context of the whole thing, T2 was perfectly plausible. The present of the movies isn't the same past as that of the future, since in the future no terminator was sent back, Sarah never was in a mental ward and John Connor eventually defeats Skynet or is at least close enough.
There is a time paradox with who John Connor's father is, sure, but that's just how it is with time travel. Only the movie present matters as set in stone. Otherwise the first movie wouldn't make any sense either since John Connor couldn't have been born in the first place, Skynet could've never gotten developed for a lack of terminator parts and no terminator would've ever been sent back.
For the first two movies, suspension of disbelief works. T3 is the movie that completely fucks the entire system by claiming that you can't alter the past in any way, which doesn't make sense even with the in universe logic. It's still a pretty okay movie. The movies after that and the TV show are fucking terrible.
That's the idea of it. Terminator parts being left over altered the future. The OG Skynet wasn't made with the help of them. You can also not send as many terminators back in time as you want, nor can you pinpoint to where. Another issue T2 has is the middle act where everything grinds to a halt.

Well, that's down to taste. Honestly, I might even agree with you that I prefer the original Terminator to the sequel but I always think of T2 and Aliens as examples of how to do a proper sequel. They take the original idea and expand on it in interesting ways. A bad sequel on the other hand just seems to wallow in the preceding instalment. That's what T3 does.

For the movies, I like how they went progressively dumber. T3 had "Ya can't 'kill' SkyNet because cloud computing and shit" (which is a surpisingly rare plot point in evil computer movies), whereas one of the latter ones went with "Oh yeah, SkyNet uploaded itself into a Super Terminator".
Autism attracts more autism. Sooner or later, an internet nobody will attract the exact kind of fans - and detractors - he deserves.

I see everyone is talking about shitty movies. But have you forgotten the biggest shitty movie franchise?
STAR WARS
There are only 2 legitimately good movies. 1 if we want to be super critical memelords who discount Empire just because the internet jacks it off all the time. New Hope is great and Empire is great too. That's all.
Now count how many other star wars movies there are and despair:
Jedi was half of a good movie and half of a shitty prequels-style movie (I mean "prequels" in the sense of how they presented the story and how it had all this bullshit comic relief.)
Episode 1 was trash. It would be inoffensive trash if not for a truly awful child actor shitting up large sections of the movie. And a podracing scene that was about 30 minutes longer than it needed to be. George was probably watching Nascar at the time and thought "if I like it, everyone else must like it too!"
Episode 2 was a milestone for how to ruin a series. It birthed so many memes purely from its awfulness. Nothing about this movie is any good and nearly every piece of dialogue induces nuclear cringe. Especially anything involving Hayden or Portman. Both seem like competent actors in other shit but they're the worst in this movie. George was in full-on lightsaber action wank mode too, glorifying jedi violence despite everything Yoda and Ben had said in the first couple of movies. There's no notable difference between Jedi and Sith behavior in the prequels, except the Sith aren't as openly quick to violence and they have an alternative view regarding their religious observances.
Episode 3 would, like Episode 1, be inoffensive if not for a notable flaw. In this case, the movie is FUCKING BORING AS DIRT. Nothing happens and the action goes on way too long. People talk and talk and talk about bullshit everyone already knows, then they finally decide to act and we get 30+ minute action sequences with special effects porn. The acting sucks ass and everyone is bad in the movie except Palpatine, who is bad in a saturday morning cartoon villain way that's fun to watch. I've felt myself falling asleep watching this fucking shit and that doesn't happen with the other prequels. Hell, you almost don't want to turn away from Episode 2 because you might miss a funny meme like "sand" or rolling in the field with CGI aliens! Or Dexter Jettster!
Force Awakens is mediocre or bad depending who you ask. It's a retread of A New Hope, and not even remotely as good.
Last Jedi is shit and I haven't even seen it yet.
Soylo looks like shit.
Rogue One looks like shit.
All the cartoons are shit except the ones with samurai jack dude, and those are action shlock for kids.
