I'd say there's too much that can go wrong in a boxing match to be much fun for me. Maybe one guy's just so much better he KOs the other bloke in a matter of seconds. Or maybe both just pummel each other for way too long until one wins by points or something.

How is that 'going wrong'? That's exactly what's supposed to happen.
Something 'going wrong' in a boxing match is when one of the guys accidentally dies. Which is very rare. Even Mike Tyson never killed anybody. They even cut the number of rounds in a World Championship fight from 15 down to 12 because some South Korean bloke died going the distance and they found that, after 12 rounds, serious brain damage and death are pretty much guaranteed. Generally, nowadays referees are so cautious about guys being pummelled to death that they'll stop the fight at the first sign of trouble. When Joe Frazier fought George Foreman, Foreman knocked him to the canvas six times before the referee called it. Today the referees are supposed to stop the fight after no more than three knockdowns.

Which would be fine if they would actually compete against each other. But there are too many belts. There's no unified one belt that's the world champion belt. So those four top boxers just go get their champion belt in different "leagues" and that's it.
Look at Walujew for example. WBA world champion. Vitali Klitschko was also world champion, but in the WBO. Obviously, people wanted to know who now was the better boxer. But there was no fight because Don King wanted ridiculous amounts of money for the fight.
So as it is, there can be a handful of "world champion"s that never have to fight each other for the privilege of carrying that title. It's bullshit.
