Regarding the cropping, the studios would rather cater to stupid people complaining about black bars on their screen rather than explaining to them that the bars are necessary because the movie/TV show is a different shape than their TV screen.

content shot on film (movies and most TV shows from the 20th century) can be rescanned at a higher resolution (HD or 4K), whereas anything shot on videotape is stuck at its native resolution (NTSC or PAL). The aspect ratio (e.g., 4:3 for old CRT TVs or 16:9 for modern TVs) doesn't have to be changed in order to upgrade to HD or 4K.

Some shows were shot on film but then edited on videotape. In this scenario, the show can be upgraded to HD or 4K, but the editing and visual effects compositing work needs to be redone, making it more expensive to upgrade these shows than for shows that were shot AND edited on film. For example, on the original Star Trek, every step of creating the show was on film, so it was pretty easy to create an HD version. (They chose to redo a bunch of the effects in CGI for some reason, but it wasn't necessary for this show.) Star Trek: The Next Generation was shot on film, but editing and compositing of the separate film elements that made up the visual effects was done on videotape, making its restoration more difficult and expensive.

Basically, it all comes down to what the movie/TV show/whatever was filmed on. Except for really shitty b-movies from the 80s-90s, movies from the 20th century were shot on film, so restoring them for HD or 4K is no problem as long as a decent negative has been properly stored. For TV shows, things get complicated because in the 1990s, a lot of CGI effects were created with video tape instead of proper film; these special effects only exist in 480p quality, so to put those effects into HD or 4K, they need to be remade from scratch. This is why it's unlikely we'll see a blu-ray release of DS9 any time soon; it would cost a lot of time and money to recreate the special effects. This is also partially why the Buffy blu-ray release is so laughably bad; when the studio remade the special effects, they did it as cheaply as possible, so the HD effects look worse than the original effects.

Yeah I love those. What don't love is the how the picture constantly switches from decent to shit quality because whoever was in charge of that didn't bother to preserve it for widescreen

They mainly replaced all spaceship and planet models, with the most apparent difference being in the planets since the old ones were like glowing balls with no real geography.

It is perfectly okay to like both Columbo and The Rockford Files.

But I guess I lean more towards Columbo. I actually have the complete series on DVD. Yes, I know I just triggered the folks here who shit on physical media.
