Well, as long as you don't wear something with extreme negative resistances and then fight a monster of that type you should be fine for the most part.
I can't tell you how hard it eventually gets. Normally, the west always got the latest MonHun about a year later with G-Rank already included. Right now for World, it's not out yet. High Rank can give you a bit of a tough time sometimes but G-Rank usually is what separates the men from the boys.
At it's heart, MonHun is a fairly casual game series.

You don't need to minmax anything or even really think about builds until g-rank or high rank (maybe), I find. You did kind of need to think more in 2nd gen, but it was for bad reasons like broken hitboxes and the game in general being unforgiving as shit. Monsters never got tired and would spam the same move a hundred times in a row if they felt like it. With broken hitboxes.

But in MWH I got to high rank and then took a break from the game. Never needed to bother optimizing anything. Used whatever weapons I felt like and played Fashion World with my armor sets. My impression of monster hunter as a franchise is that every new generation makes the series easier as a whole. That's not necessarily negative considering what I said about how difficulty can come from something being broken as shit.

It's all very relative anyway. If you don't know how to deal with a Diablos, he'll roll you all day. If you have the patterns down, even subspecies of it won't touch you.
In that regard I find the comparisons with Dank Souls to be fair.

It's really a matter of how easy you can wrap your head around a monster's pattern. You'll eventually run into one that gives you a harder time than most.
Fuck, I still can't really into Lagiacrus and his stupid cascading electrosplosions.

Lagi may just be my favourite monster, actually. Brachi is my fucking nightmare. I still have PTSD triggers from the first G-Rank encounter with one. Blastblight all day.
